Grapefruit with Ham and eggs

Voorgerecht :

Pompelmoes met hesp en eieren (4 personen)

Pompelmoes x 2
5 hardgekookte eieren
300 gram gekookte hesp
mayonaise
verse peterselie

Snij de pompelmoes in 2 en haal het vruchtvlees eruit. Hou de pompelmoes helften aan de kant deze worden nadien gevuld.

Plet de hardgekookte eieren, snij de hesp in blokjes meng dit alles samen met het vruchtvlees en de mayonaise.
Knip de peterselie fijn met een schaar. Vul de pompelmoes met de vulling en leg er de fijngesneden peterselie op. Zet de 4 gevulde pompelmoes helften een tijdje in de koelkast vooraleer je ze opdient.

Tagliatelle with marscarpone

This is one easy dish when you don't have a lot of time to cook something. I usually make this with smoked salmon but also smoked bacon cubes are very yummy, for vegetarians just use the mushrooms :)

500 gram Tagliatelle
500 gram Marscarpone
1 onion
Fresh mushrooms
Smoked salmon
1 table spoon of veggie stock powder
Peper, paprika, cayenne
dash of lemonjuice
Fresh parsil

Boil your Tagliatelle meanwhile you bake the onions till they are transparant, add the mushrooms and put the veggie stock powder on top of them. Let that simmer till the mushrooms are cooked.
Add the marscarpone, the marscarpone will melt gently in your pan, add the spices and a squeeze of lemon juice.

Let it simmer gently not too long.

When the Tagliatelle is ready get rid of the cooking water and put your smoked salmon on top of it. Add the marscarpone sauce and dress with freshly chopped parsil.

With smoked bacon cubes :


Recipe is identical except you have to bake the bacon in the pan, add your onions and your mushrooms and then continue with the rest of the recipe.

Belgian pancakes with maple syrup

Ingredients for the amount of pancakes on the plate :


500 gr self rising flour
1/2 liter milk
1/2 liter water
5 eggs
250 gr butter
pinch of salt (optional)

Gently melt your butter on a low fire or in the microwave, don't let it get brown.
Put your flour in a big bowl and add the milk, water and the eggs, mix everything together till you get a smooth mixture. Slowly add your melted butter keep stiring the mixture and when everything is added let it rest for about 15 or 20 mins.

Now you are ready to bake your pancakes !

Don't forget the maple sirup :) In Belgium we usually put some brown sugar on it or some liquid sugar syrup from Candico

Mussles à l'honey

In Belgium Mussles are a favorite dish. They can be prepared in many ways after experimenting a few times this is my superbe result.

3 kilos of mussels
bush of thym
4 or 5 stalks of Lovage (Levisiticum officinale)
3 carrots
2 big onions
2 or 3 leaves of laurelleafs
3 or 4 stalks of lemon balm (Melissa officinalis)
black pepper
pinch of salt


First i clean and wash the mussles thoroughly.
Then i put them in a bucket with salt and flour for a couple of hours.
I rinse them with lots of water just before i put them into the pot.
I cut the onions in rings and heat some oliveoil in a big pot, I fry the onions a bit.
After that i put all the nicely chopped vegetables and herbs and stir everything.
I add the mussels, I add the black pepper and salt and I add 1/3 of water and put the lid on the pan.
Mussels don't take long to cook, once the water starts to boil you have to shake the pot. Not easy ! Take a cloth and shake the pot till the mussels that were on the bottom are on top now.

Again let it cook for a few minutes. Of course you can add some white wine or garlic if you prefer that :)
